HPP - High pressure preservation of foods

The high pressure processing of food products (HPP - High Pressure Preservation) reduces or even eliminates unwanted microorganisms in foods. This product-preserving process can extend the shelf life of foods without the use of additives. At the same time, high pressure preservation increases food safety.

Consumers benefit from this process, since both fresh and processed foods, as well as high-quality ready-to-eat meals without additives, can be stored and consumed over a longer period.

HPP systems

High pressure processing of foodstuffs (MULTIVAC HPP) is suitable for handling vacuum packs as well as modified atmosphere packs (MAP), for which MULTIVAC has developed a unique procedure. Our portfolio includes various systems with a chamber volume of 55 to 350 liters.

HPP systems in tandem operation

High pressure processing of foodstuffs (MULTIVAC HPP) is suitable for handling vacuum packs as well as modified atmosphere packs (MAP), for which MULTIVAC has developed a unique procedure. Through the use of an HPP tandem unit with two 350 litre chambers working together intermittently - i.e. one chamber is pressurised while the other is emptied and refilled with packs - the overall system is semi-continuous. In this way, depending on the filling level, throughputs of up to 4 tons can be achieved.
